In the mood for some Linguica

One of the many things I missed when I was living in the DC area was Linguica.  Living here in southeastern Massachusetts, you know how easy it is to find, but down there not so much.  I love it grilled, on a pizza, with onions and peppers, or just plain.  Gaspar’s linguica is a great brand, and you can do all these things with it, and more, just check out this recipe for Baked Linguica:

1 lb. Linguica, cut in 3 inch pieces

1 medium Onion sliced

1 tsp. Salt

Dash pepper

1 can tomatoes

1 can water

4 medium potatoes

2 carrots (optional)

Bake at 400 degrees 1/2 hour, turn potato and linguica over, bake 1/2 half hour more or until potato is done.  You may have to add a little water if linguica gets too dry.
